Scones and Devon Cream

Australia Day abroad calls for lots of things that remind me of home. Including sausage sizzles, pavlova and scones! Here's a recipe I found via Recipe Community titled BEST SCONE RECIPE EVER! I just had to try. I made mine via the thermomix but any mixer would be fine! SCONES Ingredients 400 grams of SR flour 40 grams of butter 30 grams of sugar 1 egg 125ml of cream 125ml of milk Directions Preheat oven to 220 degrees celcius Place flour and butter into TM bowl and mix for 8-10 seconds on speed 9 until bread crumb consistency Place sugar, egg, milk and cream into TM bowl and mix for 5-10 seconds on speed 4 until mixture is combined Lightly knead mixture for 30 seconds on interval speed until mixed Pour dough mixture* onto well floured surface (or well floured bread mat) and lightly pat dough into 3cm thickness. NOTE: Dough will be very light and sticky - this is ok. Cut into rounds with scone cutter. Place scones together onto oven tray lined with greaseproof paper. Glaze with a little milk and bake in a very hot oven at 220 degrees for 10 to 15 minutes. Cool in a clean teatowel on a wire rack scones and devon cream.JPG [caption id="attachment_762" align="aligncenter" width="300"]Scones and Devon Cream Scones and Devon Cream[/caption] [caption id="attachment_764" align="aligncenter" width="300"]Served with devon cream and jam Served with devon cream and jam[/caption] Devon Cream found via Ingredients 4 ounces mascarpone (about 115 grams) 1 cup (240 ml) heavy whipping cream 1 teaspoon pure vanilla extract 1 or 2 tablespoons granulated white sugar Zest of lemon or lime (optional) Directions Place all the ingredients in a large bowl and beat until the mixture holds its shape and looks like softly whipped cream. Use right away or cover and refrigerate the cream until serving time. Makes about 1 1/2 cups. Preparation time 15 minutes. This is licking bowl and spoon type of goodness! Enjoy x
