Homemade Hamburger Buns

There's nothing better than fresh bread cooking in the oven. That smell gets me every time. Here's a recipe via Journal of a French Foodie which I changed a little. I used a thermomix but it would be easy enough to do in a stand mixer. Just melt the butter before following the rest of the recipe. Ingredients 600g bread flour 15g fresh yeast or 2 tsp of dry yeast (or fast action yeast) 2 tsp sea salt 55g butter 120g water 235g milk 25g of sugar 1 egg (optional for glazing) Sesame seeds (optional sprinkle on top of buns before baking) Directions Place milk, water and butter in thermomix and heat at 50 degrees for 2 minutes on speed 3. Place dry ingredients in the thermomix bowl and mix on speed 3 for 10 secs. Then on speed 3 for 3 minutes knead the dough. Place on a floured board and divide into about 12 portions less if you want bigger buns. Make in round balls and leave on a tray covered with a tea towel for about 45mins-1 hour. Glaze buns with the egg wash and sesame seeds.
