Summer fresh salads with a bit of a twist. I find it hard sometimes to get my kids to want to eat salad with their meals.

1- 2 cups of cooked brown rice. You can cheat by buying the pre cooked microwaveable rice if you don't have time to cook the rice
1/2-1 cup of either raisins or currents
1/2 red capsicum diced
1 cup of cashew nuts crushed
1/2 red onion sliced
1 packet of baby spinach leaves
1/2 of spring onions chopped
3 tablespoons of olive oil
2 tablespoons of balsamic dressing
Juice of half a lemon
Put into jar and shake. Drizzle over the salad before serving and toss it through so every morsel is covered.
